Spiced Cookies

A bite of one of these cookies and a lot of spicy flavors start to take over.

Ingredients:

200 gr of flour

2 teaspoons baking soda

100 gr of brown sugar

100 g of butter (at room temperature)

1 egg

3 teaspoons of milk

orange  zest

Spices:

1 teaspoon ground cinnamon

3 or 4 ground cloves

1 teaspoon ground ginger

a pinch of ground white pepper

1 teaspoon ground cardamom

1 teaspoon ground anise

1 teaspoon nutmeg

In a bowl, mix the butter with the sugar until it is well integrated, then add the beaten egg, continue mixing and add the rest of the ingredients, at the end add the flour and mix until there is a compact mass. If you have time, let the dough rest for an hour, so the dough will be well impregnated with all the flavor of the spices.

Then start to mold the cookies, take small pieces of dough and make small balls with your hands. Place the dough balls in a tray lined with baking paper, lightly squeeze them on top with a spoon. Take to the oven, previously heated to 180ºC, for 10 minutes or until they look golden brown.

Let them cool a bit before eating, if you can wait ..;) The smell that they leave at home is really nice and gets us ready to start baking for the upcoming Christmas holidays; they are SO good! Enjoy!

Classic Scones

This yummy breads are one of the most classic recipes of english tea time, also they are so easy to prepare…you can add raisins, dates, cinnamon, or whatever you like to make them more tasty 🙂

We need the following ingredients:

450 g of all purpose flour

a pinch of salt

3-4 tablespoons of sugar

250 ml of milk

2-3 teaspoons of baking powder

60 g of butter at room temperature

Lemon zest, raisins, cinnamon…(optional)

Step by step:

  • In a bowl, mix the sifted flour, salt and baking powder, then add the butter and start kneading with your hands until well mixed and you get a lumpy dough.
  • Add the sugar, lemon zest (or whatever you have chosen like raisins or cinnamon). make a hole in the middle and add the milk; start kneading now until you get a soft dough.
  • Sprinlke a bit of flour on the working table, and start flatten the dough with a rolling pin until you have a1 cm wide.
  • Shape the scones with the help of a rounded cutter, place the scones on the baking tray and brush them with milk.

  • Bake forabout 10-15 minutes (or until they are lightly brown on top) at 210-220º C
  • Normally they are served cut in half, together with jam and cream, but feel free to add whatever you like most: chocolate butter, more cream… 😉

Vegan oatmeal cookies

These cookies are so easy to bake that it wont take you more than 35-40 minutes. Without sugar, butter, eggs or milk…seems impossible…but yes, they are actually very yummy and very healthy.
Perfect for vegans, those who cannot take sugar or anyone who wants to eat something good, just for no reason at all 🙂
The appereance is similar to the ‘chips ahoy’ cookies, but I replaced the chocolate chips for dried cramberries.
The ingredients are:
200 gr oatmeal
3 tablespoons of olive oil
50 gr of agave syrup or sugar cane honey
Zest of one apple
A handful of dried cranberries (previously soaked in water for half an hour to hydrate them)
Pinch of salt
1/2 teaspoon of baking soda
Preparation:
 
Easy: in a bowl, mix well all the ingredients, then, with your hands, make the shape of the cookie: make a ball first and then flatten with your hand or a spoon lightly.
Put the cookies in the oven, preheated at 180ºC, for about 15 minutes.
Deep them into the vegetable milk to get the best taste 🙂

Tea cookies recipe

Hi everybody!
I hope you are doing well;
to prepare this simple recipe, we don´t need more than four ingredients (that we usually have at home) and the result is really delicious.
These cookies are perfetc to enjoy with a nice cup of tea or even just to give them as a present when we visit somebody.
Here I tell you my version of the this cookies, here we go!
Ingredients:
190 gr of butter (The butter should be at room temperature)
140 g flour
50 gr cornstarch
60g powder sugar
 
1) Mix the butter with the powder sugar until is well integrated.
2) Slowly add the cornstarch (Maizena) and keep on stirring, then, add the flour in two times until you get a smooth dough.
3) Place the dough into the pastry bag and we can start to create our cookies with the shapes we like most :).
4) Finally, place the cookies in the oven at 150ºC for about 20 minutes.
As you can see, it´s a very simple recipe, they come out light and soft and you can decorate in different ways: with chocolate, almonds, jam…in this case I just gave to some of them a touch of chocolate and cocoa powder.

Matcha tea cookies

Hi everybody!
here I am with my new post after a big break. Actually I was looking forward to post again and especially something related with this kind of tea that I really like. Today´s recipe can be made without tea and the cookies will be equally good 🙂
 
 
People around me already know that I am a BIG fan of tea, specially red and green.
Talking about green tea, two years ago I discovered the Matcha tea (the king of the teas); I really like it because it has many healthy benefits (three times greater than the normal green tea commercially available). Its a powder green tea with a high concentration of antioxidants, it helps to reduce high blood  pressure and moderate cholesterol.
 

 

 
 
We can enjoy a nice cup of Matcha but the use of this tea goes to many more areas, for example the amount of recipes that can be made with it like cakes, truffles, creams, ice-creams etc.
Today a super easy recipe, shall we start?
 
Ingredients: 

 

 
 
150 gr of flour
3 tea spoons of ground almonds
90 gr butter (without salt)
1 pinch of salt
10 gr of yeast
50 gr of sugar
2 egg yolk
2 tea spoons of Matcha tea
1 pinch of vanilla
 
1º) First we sieve the flour together with the yeast and the almonds.
2º)  After that we mix the butter together with the sugar until we get a smooth mixture, we incorporate the egg yolks, the vanilla and the tea; mix well and finally incorporate the flour and mix until the ingredients are well mixed.
3º) With our hands we knead the mixture. Make a ball, wrap it plastic foil and let it rest in the refrigerator 1/2 hour to 1 hour.
 

 

4º) Now, we can stretch the mixture and with the cookie cutter we shape the cookies and place them on the baking tray.
5º) Preheat the oven 175º C and place the cookies during 10 minutes (flip the tray half the time, so all the cookies are cooked the same way)
 

 

 
6º) Let them cool down and get ready to enjoy your matcha cookies 🙂
 
 

 

And … that’s it! we have our matcha tea cookies, although as I  said before if you don´t have Matcha Tea , you can make the cookies without it. They can be decorated with powdered sugar or chocolate, but I personally prefer the green color that the tea provides them. They are delicious!

Oatmeal and sesame cookies

 Hi everybody, 
today I want to show you a super healthy and easy oatmeal and sesame cookies receipe. It desn´t take more than 30-35 min and they are delicious to snack.
 
There are many receceipes with oatmeal, (I really love it!), it is very healthy and it has many beneficts: digestive (very good for those who have a delicate stomach), rich in fiber and A, B and E vitamins. Minerals like calcium, iron and magnesium. It doesn´t have a lot of calories, so it´s perfect to have for breakfast, snack, etc.
On the other hand, sesame seeds have many proteins, unsaturated fats and it helps to reduce the cholesterol. Also they have calcium, iron, zinc and they are antioxidant.
ok, very simple, let´s start!!
The ingredients that we need are: (don´t say the exact amounts, in this case that depends on what you like)
 Peanut Butter
–  Honey
–  vanilla
–  Toasted sesame seeds
–  Oatmeal
–  Flour
–  Water
We mix two spoons of peanutbutter and the honey (also two spoons, depending n what you like). After that we add the oat (I use to put quita a lot) and the sesame seeds ( 3 or 4 big spoons)
Mix well, we can add a bit of water (1 or 2 spoons),and a spoon of flour wich  will help to get everything mixed.
When we have the dough ready, we can start shaping the cookies, with our hands we make a tight ball and then we push them to make it flat.
 

Put the cookies in the oven 170º preheated during 10-15 minutes.Let them cool down and ready to eat!!!

Well, that was pretty easy to make wasn´t it? You can also add other kind of seeds that you like, for example: lineseed, wheat bran, raisins…really tasty!!
