today´s recipe is super easy and healthy, perfect to enjoy this summer after a nice lunch or dinner.
My Custard´s recipe it´s a bit different from the traditional Custard: does not have, eggs, sugar or milk, perfect for vegans. It does not have many calories, it takes very little time to prepare (30 minutes) and it´s really delicious.
Ingredients:
2 glasses of soy milk
vanilla extract
zest of one lemon
2 tablespoons half of agave syrup (or any other natural sweetener you like)
1 teaspoon curcuma
2 teaspoons cinnamon
2 tablespoons cornflour
The crumble:
For the crisp:
1 cup quinoa
2 tablespoons agave syrup
1 tablespoon of unsweetened cocoa powder

We start mixing in a pan soy milk, vanilla extract, lemon zest, agave syrup, cinnamon and curcuma. Let it boil then add the cornflour and cook for five minutes. Serve this mix in a glass bowl and let it cool.
To make the crumble mix in a pan the quinoa, cocoa powder, raisins and finally the agave syrup; stir well for a couple of minutes until everything is well integrated. You just have to place the quinoa crumble on the top of the custard.
The crumble is optional and can always be replaced by pieces of cookies if you prefer. I hope you try this at home because is very easy, healthy and tasty.
