I hope you are having a nice summer.
Since I´m spending part of the summer at home, Asturias‘mi casa’, I thought I will take the advantage and try to learn how to make the typical rice pudding recipe from here. The recipe of my grandma, and now my mother is teaching me.
There are thousand recipes and everyone makes it a bit different.
I must say that this time I´m just learning and watching and my mom is the boss, so all the credits are for her 😉
Ingredients:
470 gr rice
1can condensed milk
1/2 cup of sweet anise
lemon peel
Cinnamon stick and ground cinnamon to decorate
4 liters of milk
800 g sugar (double the rice)
25 gr of butter
1) In a large bowl, we put half a liter of water with a pinch of salt and let it boil; then add the rice and the butter and stir with a wooden spoon always to the same side, so the rice wont stick to the bottom.
In another bowl we cook the milk together with the cinnamon stick and the lemon peel, let it boil and add it slowly to the rice. This process of incorporating the 4 liters of milk takes about two hours until everything is well integrated.
2) When the 4 liters of milk are completely added and the rice grain is quite soft we can add the sugar (let it boil and don´t stop stirring); we take the opportunity now to add the anise and condensed milk.
3) Continue stirring, you will see now that the rice is becoming thicker and the mix looks like a soft cream. Turn off the heat and leave it rest for a few minutes.
…and after two hours (more or less), we have our rice puddin!!!!, it should be like a soft cream, with all the ingredients well integrated, the rice grain should not be lost.
