Farewell cake

…’A farewell party is well worth a cake…or two’ that´s what I thought when we started thinking about throwing a goodbye party for all the friends that we made during these, almost, three years in Belgium, also a good time to celebrate my husband´s birthday at the same time. At the end of this month we will move to the north of Spain (Asturias) and before all the madness with the moving begins, I wanted to find a bit of time to write this post.

This is a layer cake, lemon cake in the middle and chocolate layer cakes on the top and below with swiss meringue buttercream, mixed with strawberry juice which gives the soft pink color, plus the natural strawberry flavor.

This is how I´ve done it:

Ingredients for the lemon sponge:

3 eggs

50 g of butter (at room temperature)

225 g of all purpose flour

two teaspoons of baking powder

lemon zest and juice from half a lemon

Separate the whites from the yolks and whisk the whites until they form peaks. Mix the sugar with the butter and when it has a cream texture add the egg yolks one at the time and stir until everything is well mixed. Now add the lemon and the zest juice to this mixture and when everything is well integrated slowly add the whites from the eggs and keep mixing.The last step is to add the previously sifted flour with the yeast, mix well and put the mixture in a greased mold (I used an 18 cm mold). Put it in the oven at 180º C for about 45 minutes or until de needle comes out clean. Let it cool down for about 10 minutes and remove it from the mold.

Ingredients for the chocolate cake:

3 eggs

50 g of butter (room temperature)

225 g of all-purpose flour

2 teaspoons of baking powder

2 tablespoons of cream

2 tablespoons of cocoa powder

a handful of black chocolate chips

The procedure is the same as the lemon cake but instead of adding the juice and lemon zest add the chocolate chips and the cream and sift the flour together with the cocoa and yeast. Put it in the oven for about 50 minutes at 180 º C or until the needle comes out clean.

Swiss meringue buttercream with strawberry juice:

5 egg whites

150 g of sugar

225 g of butter (room temperature)

1 dash of lemon

Place the sugar and the egg whites in a bowl, set the bowl over a pan with a bit of water and put it on the low fire (the water level should not reach the bottom of the bowl on top) and gently whisk the egg whites until the sugar has dissolved (you can touch the mixture with your fingertips, when you don´t feel the sugar anymore it´s ready to remove from the fire). Continue stirring a bit until it cools down. Now you can start beating high speed, and add a dash of lemon, until the mixture forms stiff peaks.

Add the butter, one piece a the time and incorporate well, it can look a bit curdled, that´s ok, continue mixing slowly and will get nicer. I left it over night in the fridge and the next morning was perfect to start working with it.

I had some fresh strawberries and I made like a kind of mermelade with them: cut them, put them in a pan with a bit of water and sugar and bring it to fire until boiling. Let it cool down and smooth the strawberries with a blender, add a couple of tablespoons to the Swiss meringue buttercream, that gives a light pink colour and a delicious flavour.

Assembling the cake:

I have done three sponge cakes: one lemon cake and two chocolate cakes. Cut the cakes in half horizontally. Take the chocolate cake and put the buttercream on top, place on top of this a layer of lemon cake, again spread the buttercream on top and finally another layer of chocolate cake. Decorate to your taste, you can use flowers, fruits, more buttercream.

Bagels

After several attempts I could finally come up with a recipe for bagels that I´m satisfied with; crispy outside and tender inside. This time I needed a lot of patience to let them cool down until I could try one, and yes! that was nice!

It´s a simple recipe, and it takes about 1 hour and 40 minutes since you have to let the dough rest so it can rise. It´s very easy and you can eat them with anything that you like: cream cheese, avocado, jam…well, I´m sure you have a lot of ideas 🙂

You will need need the following ingredients:

20 gr of fresh yeast

300 gr of wheat flour

1 teaspoon of salt

200 ml of lukewarm water

sesame or poppy seeds

Start disolving the fresh yeast in 200 ml of lukewarm water, let it rest for a few minutes. Meanwhile, mix the flour with the salt. Now incorporate the mixture of yeast and water to the flour and stir until you get a soft batter. Knead for about 10 minutes, make a ball and spread a bit of olive oil on top, so it doesn´t get a crust form. Let the dough rest for about 1 hour, covered with a clean cloth , so it can rise.

After that, divide the dough into 6 or 8 pieces and roll each piece into a ball. Then flatten the ball and make a hole in the center, using the stick of a wooden spoon, for example. Place the bagels on a baking tray and let them rest for about 25 minutes.

Now, put a pan with water to boil and boil the bagels minimum 30 seconds each side (this is what gives them the crunchy layer), let them dry and paint them with beaten egg, then sprinkle the sesame and poppy seeds on top. Put them in the oven at 200 ºC for 20 minutes. Let them cool down a bit and grab one! Enjoy!

Suikerbrood (Sugarbread)

Suikerbrood or Sugar Bread is a traditional bread recipe from Holland, you can find different versions but I think the most popular recipe is the one of the province of Friesland and the one with higher amount of sugar!

Normally they eat it during the breakfast spreading butter on top, so you can imagine the loads of energy you get for the rest of the day!

It´s very easy to make and very tasty, here I show you the recipe step by step:

Ingredients:

350 gr of flour

1 pinch of salt

1 tablespoon of ground cinnamon

1 sachet of baking powder

200 ml of milk

20 gr of white sugar

200 gr of pearl sugar

50 gr of butter

First sift the flour together with the sugar and the pinch of salt. Dissolve the yeast in the warm milk and add it to the flour mixture, knead well until you get a soft dough. Cut the butter into cubes and knead it into the dough until everything is blended. Cover the dough with a clean cloth and let it rest in a warm place for 20-30 minutes.

You can buy the pearl sugar, but in this case I just smashed 200 gr of sugar cubes until I got small pieces…fast and easy 🙂

After the dough has rested, knead in the sugar pieces and the cinnamon, knead for 5 minutes or until everything sticks inside of the dough. Let the dough rest again for about 10 minutes.

Place the dough in a greased pan and put it in the oven at 170 ºC during 30-35 minutes. Let it cool down for 10 minutes and unmold.

Gluten free cake with vegan meringue

If you are thinking about a very simple cake, gluten free, very light and a bit more healthy, definitely this is the cake for you. I was surprised about its simplicity and I think it allows any kind of frosting or filling you like.

This cake is not totally vegan since I used eggs but it´s completely free of gluten, so it´s safe for celiac patiens.

The best of it is that it contains little sugar, so you can have more than one piece at a time (yes, I did) without feeling full!

We´ll need the following ingredients:

For the cake:

150 gr of sugar

120 gr of cornstarch (maizena)

6 eggs

lemon zest

the juice of one lemon

half teaspoon of  bicarbonate

First separate the egg yolks from the whites. Whisk the egg yolks together with the sugar until they get a white color.

Then whisk the egg whites until they form peaks.

Add the lemon zest and the lemon juice to the egg yolks and mix well, then add the egg whites in two parts and slowly mix it with the rest of the ingredients. The last thing to add is the cornstarch, do it also very slowly so you don´t get lumps.

Put the whole mixture in a previously greased mold (18 cm) and put it in the oven at 150 ºC during more or less 1 hour.

Decorating the cake:

I wanted a very light frosting but didn´t want to use more eggs or cream cheese, so this time I used natural egg replacer, also gluten and dairy free and I have to say I´m surprised with the result (in a good way). Easy to use, if you want to make meringue you just have to put 3 or 4 tablespoons in a mold and add 2 teaspoons of water, and whisk. I added a bit of vanilla and a bit of sugar (I didn´t want it very sweet, so to your taste) and keep whisking until it forms peaks.

For the finishing touch I used blueberries, their flavour fits pretty well with the rest of the cake.

And finally the sauce: I put a handfull of blueberries in a pan together with water (be careful that the water doesn´t cover the blueberries). I didn´t add sugar but a little bit of stevia (to your taste) and let it cook. I added a bit of coconut milk and mixed it with the blender…delicious!

My aunt´s cake

There are cakes, and special cakes, and for me this is one of the lattest. Since I was little I was always hoping to get a big piece. My aunt would always prepare it for the day of the big celebrations in the village and I didn´t mind the amounts of nice food that passed before my eyes, my only goal was to get to dessert time and have a big piece, then I would be satisfied.

A couple of months ago I asked her the recipe and finally, last week while I was visiting my homeland, I could make this recipe. Just a bite brings me back directly to my childhood hhhmmm.

Here I show you my aunt´s recipe. It´s easy and no oven needed. Just a piece is enough like a snack. Is soft and spongy since the cookies absorb all the cream after leaving it in the fridge for a couple of hours or during the whole night. Are you in?

Ingredients:

6 eggs

half a kilo of sugar

250 gr of soft butter (at room temperature)

1 box of round biscuits

First we prepare the filling: separate the egg whites from the yolks. Beat the egg whites until they form peaks. Mix the butter and the sugar until they get creamy, add the egg yolks one at a time and keep stirring. Slowly add the egg whites and mix carefully until a soft cream.

Now place the biscuits on a platter or in a mold, one layer after another soaking them in the cream. If you use too many biscuits you will get a dry cake, so be generous when you add the filling.

Now put the cake in the fridge and let it rest for a couple of hours or during the whole night; also you can put a weight on top of the mold so the biscuits absorb the filling better.

Next day it´s time to decorate, I made meringue and used some strawberries to put on top.

Lemon cream with raspberries

I had a lot of egg yolks left from the ‘big chocolate cake’ that I made and I thought I had to make something with them (not even think about throwing them away)

I found this recipe that it takes about 20 minutes, plus 1 hour in the fridge and I ended up very happy with the result and I thought I will share it with you.

It happend to be that I had some raspberries at home but I think if you use whatever fruit you like, it´s going to taste just the same…delicious!

Ingredients:

Lemon zest

1/2 liter of skim milk

4 egg yolks

1 spoon of cornstarch

60 gr of sugar

125 gr raspberries

40 gr of brown sugar to decorate.

Put the milk in a pan and let it boil with the lemon zest. Whisk the egg yolks with the 60 gr of sugar until they have a clearer color (almost white). Add the cornstach with a little bit of the boiled milk; mix to integrate the ingredients well and finally add it to the rest of the milk.

Keep on stirring until the mixture starts to get thicker.

Put the raspberries on the bottom of the glass and pour the cream on top.

Keep it in the frigde for at least one hour. When it´s time to eat it, you can sprinkle some brown sugar on top and burn it with a blowtorch or with the gril in the oven.

Big chocolate cake

The best part of baking a big cake like this one, is that I knew I was going to share it with a lot of nice people, so I enjoyed double.

When I read this recipe in one of my books I knew it was going to be this one. I think it´s perfect for any kind of celebration and everybody likes chocolate, right?

Just because this year in Mother´s Day I won´t be able to be with my mum, I´m sure I will make it again soon for her when I go back home.

It´s big, but pretty simple to make, so let´s start!

Ingredients:

For the cake:

400 gr flour

145 gr of butter (room temperature)

240 gr of sugar

1 pinch of vanilla

1/2 sachet of baking powder

60 gr of cocoa powder

35 cl of milk

11 egg whites

salt

For the filling:

15 cl of cream

300 gr of pure chocolate

The cake:

In a bowl mix the butter, sugar and the vanilla until you get a soft cream.

In another bowl mix the flour, the baking powder and the cocoa powder. Then add that mix bit by bit, alternating with milk, to the other mix (the one with the butter) and make sure that all ingredients are well mixed.

Beat the egg whites (adding a pinch of salt) until they form soft peaks and very slowly incorporate them to the other mixture.

Grease the mold and put it in the oven at 180º C during more or less 1 hour and 10 minutes. Take it out of the oven let it cool down.

The ganache:

Melt the chocolate together with the cream until you have a smooth creamy mixture. Let it cool down for a while and then put it in the fridge until it´s completely cold. Then, with a mixer whisk the cream a little bit, the color of the chocolate will be clearer now.

* Tip: don´t whisk too much, otherwise it will get very hard and will be difficult to spread on the cake (yes, happened to me :))

Just cut the cake in layers and fill it with the chocolate cream. You can decorate as you like, use your imagination!. This time I used macarons, you can find the recipe here.

Marañuelas

My mom asked me: what is going to be your next post? Any new recipe that you have in mind? I just told her that this week I was running out of ideas and I didn´t have anything in mind yet.

‘Well, you should try the Marañuelas’, she said.. automatically my mind started to work and got a clear idea of how I wanted to present this recipe. Good! some ideas came to my mind, my mom sent me the recipe and I started to work on it.

Marañuelas are a popular sweet treat from my region in Spain (Asturias), they used to make it during Easter period, but nowadays you can find them at any time of the year.

You´ll see that they have different shapes, that is because in the early days every family would have their own shape of Marañuela, so they could distinguish them in the common oven (I think it´s so cool that they would share the same oven, it gives a nice community feeling)

It´s pretty easy to make them, and they are delicious,I  hope you like them, so let´s go for it!

Ingredients:

2 eggs

250 gr of sugar

125 gr of butter

500 gr of flour

A teaspoon of baking powder

A dash of anise

A pinch of cinnamon

Lemon zest

How to make Marañuelas:

 It is recommended to clarify the butter first: put the butter in a saucepan at low heat, don´t stir and just let it cook slowly. You will see that it will start forming a white foam on the surface after is cooking for five minutes. Now remove the white foam with a spoon to let the rest of the liquid butter clean, finally you can filter if there are still some remaining foam.

In a big bowl combine the liquid butter, the sugar, add the eggs (one by one), the anise, lemon and cinnamon.

Add the flour and the baking powder carefully and mix well until the dough is not sticky anymore.

Take a piece of the dough and make the shape that you like most, place them in the baking tray with some space in between because they will grow in the oven. Preheat the oven at 180º C and leave your Marañuelas in the oven for about 25 minutes.

Chocolate brioche

I had some chocolate eggs left from Easter, so I thought I could use them to fill some nice brioches that I wanted to make, why not? They are perfect for a nice weekend breakfast, so I rolled up my sleeves and got started.

They are very simple to make, but you also have to be patient since the dough has to double its volume but it´s worth it seeing the final results. These have the shape of a muffin but is a sweet bread texture.

You will need the following ingredients:

55 gr of melted butter

250 gr of flour

a pinch of salt

3-4 tablespoons of sugar

1 sachet of baking powder

2 beaten eggs

dark chocolate

First mix the dry ingredients: sift the flour together with the baking powder add the salt, the sugar and mix well. With your hands make a hole in the middle and add the liquid ingredients: the melted butter and beaten eggs.

Knead well for a few minutes, make a ball and let it rest in a clean bowl for at least 1 hour and half until it doubles in volume.

After this time, knead again and then start making little balls and put them in the mold (previously greased), put a piece of chocolate on top and then make another ball with the dough to place it ot top. You can ´glue´ the two parts together using some milk.

Cover the brioches with plastic film and let them rest in a warm place for at least 1 hour and a half.

Brush the brioches with beaten egg, you can also put some sugar on top. Preheat the oven at 200º C and bake them for about 12-15 minutes.
