I would like to continue with the ‘Christmas time dessert´s series’. A good chocolate cake, simple, elegant and perfect to finish the New Year´s Eve dinner and start de New Year´s celebration.
Then, pour the mixture into another bowl and let cool down, cover and place in the refrigerator during 1 hour.
In this case I´ve made two cakes, you can divide the dough in two or make another separate cake with same ingredients and measures, so the cake will be taller (that is what I wanted).
For the decoration, I used almond cubes, I think it looks pretty elegant, just ready to enjoy during New Years´s Eve.
We need something to drink with the cake!! I made mulled wine or Gluhwein, a traditional drink from Germany and northern countries of Europe, especially around Christmas.

Hi everyone!
Less than two weeks until Christmas… I´m sure many of you have already thought about the dinner menu; but in case you are wondering about what dessert to make, here´s an idea for a simple cake, perfect to start the Christmas celebrations: frangipane cake. This cake is filled with almond cream, which is commonly used in Belgium, especially this time of year.
Here is the recipe step by step:
Ingredients for the base dough:
150 g flour
85 g butter (room temp.)
35 g icing sugar
2 tablespoons of milk
1 egg yolk
Ingredients for frangipane cream:
150 g sugar
180 g butter (room temp.)
200 g ground almonds
4 eggs
1 teaspoon of almond essence
150 gr strawberry jam
Sliced almonds for decoration
Preparation base dough:
1º) Sift the flour into a bowl, then, with the help of your fingers, knead the butter into the flour until you get a crumbly dough. After that you can add the icing sugar, egg yolk and the milk.
2º) Knead the dough with your hands (you can add more milk if it´s too dry) and make a ball, wrap the dough in film paper and put it in the fridge for 30 minutes.
3º) Preheat the oven at 180º C. Stretch the dough on the working table and then place in the greased mold.
Before placing it in the oven make holes in the dough with a fork, then, place a baking paper on top of the mold and fill it with dry chickpeas or small balls, so the dough does not rise.
Bake for approximately 15-20 minutes.
Preparation frangipane cream:
1º) Preheat the oven at 170ºC.
2º) In a food processor we put the sugar, butter, flour, ground almonds, eggs and almond essence together; mix until you get a smooth cream.
3º) First extend a thin layer of strawberry jam on the bottom of the cake. On top of the jam extend the almond paste and cover the entire surface of the cake (smoothen the surface with a spoon).
4º) Place the cake in the oven for about 30 minutes. After that let it cool down and decorate with icing sugar and almonds. I also used some pasta from the base dough to bake some cookies with star shape and use it as decoration.
Delicious! Perfect to give the sweet touch to a good family dinner. I hope you enjoy it! 😉

The Bundt cake is one of my favourite recipes, just because the shape is so cool and it tastes really nice; It is perfect for special occasions. The smell of the cinnamon and ginger takes me close to the Chistmas time.
1) Peel the apples into small pieces, reserve in a bowl where we will add the ginger, cinnamon and orange zest … let it rest for a few minutes.
2) Mix well the butter with the brown sugar until we get a soft dough. Then we add the 4 eggs, one after mixing the other.

3) We add to this mix the apples, white sugar and milk and then we can add the sifted flour with baking powder, baking soda and a pinch of salt. Slowly stir until all ingredients are well integrated.
4) We pour our Bundt cake mix into the mold and when we have it half full, distribute laminated nuts, then pour the rest of the mix. Make sure the entire mixture is evenly distributed.
Important: after you take it out from the oven, let cool before removing the cake from the pan.

Caramel frosting:
1) Melt the butter in a pan, then, add brown sugar, cinnamon and orange zest … stir well until all ingredients are blended.

Many times I wanted to bake the carrot cake, so popular in UK and the States, and I thought that this time of the year fits really well to give it a try 🙂
Never did it before, but I think the results are pretty good and delicious. I warn you! take a small piece first because it fills you up quickly 🙂
The combination of all the ingrediets with the carrot, leaves behind an amazing flavour to enjoy!
The ingredients to make the cake are:
360 g all purpose flour
1 packet of yeast
1 teaspoon ground cinnamon
4 grated carrots
250 ml sunflower oil
200 g sugar (I used white sugar, but you can also use brown sugar)
4 eggs
100 g of nuts
1 pinch os salt
1 pinch of baking soda
The ingredients for covering and filling are:
1 tub of cream cheese
125 g butter (room temperature)
150 g icing sugar
200 ml whipping cream
Orange zest
The cake:
1º) Sift the flour together with yeast the baking soda and pinch of salt.
2º) Beat the eggs with the sugar, then add the oil and stir well.
3º) Add the grated carrots and the walnuts, mix until the ingredients are well integrated.
4º) In the next step we add the flour and yeast, stir slowly.
5º) Finally pour into the mold and take it to the oven at 180 ºC for about 40 minutes (the time depends on the oven)
Cream cheese frosting:
1º) First mix well the butter with the sugar, we will obtain a nice and smooth cream.
2º) Add the whipping cream, the cheese and the orange zest. Beat well and you will get a consistent cream.
3º) Finally we cover and fill the cake; you can decorate how you like most, in this case, I used chocolate sprinkles that I put on the side of the cake..
And…here we have our delicious carrot cake; It is not difficult to make, so we can bake it to enjoy it in any occasion.

Is there anyone there who doesn´t like chocolate?.
Today a quick and easy recipe for making a delicious brownie; perfect to enjoy and chill during a nice autumn afternoon (my favorite season ::)
Here I share my way of making it…What is your favorite brownie recipe??
Ingredients:
200 g dark chocolate
1/2 cup flour
3/4 cup of sugar
50 g of walnuts
50 g butter
3 eggs
1º) Melt the chocolate together with the butter (low heat and stirring constantly)
2º) In another bowl mix the eggs together with the sugar.
3º) Slowly incorporate the flour, don´t stop stirring.
4º) Next step, incorporate the chopped nuts and then the chocolate.
5º) Finally we pour the mixture into the mold and take it to the oven 210ºC for about 15 minutes.
You can let it cool down or just enjoy it warm with vanilla icecream.

1) In a large bowl, we put half a liter of water with a pinch of salt and let it boil; then add the rice and the butter and stir with a wooden spoon always to the same side, so the rice wont stick to the bottom.
