
The best part of baking a big cake like this one, is that I knew I was going to share it with a lot of nice people, so I enjoyed double.
When I read this recipe in one of my books I knew it was going to be this one. I think it´s perfect for any kind of celebration and everybody likes chocolate, right?
Just because this year in Mother´s Day I won´t be able to be with my mum, I´m sure I will make it again soon for her when I go back home.
It´s big, but pretty simple to make, so let´s start!
Ingredients:
For the cake:
400 gr flour
145 gr of butter (room temperature)
240 gr of sugar
1 pinch of vanilla
1/2 sachet of baking powder
60 gr of cocoa powder
35 cl of milk
11 egg whites
salt
For the filling:
15 cl of cream
300 gr of pure chocolate
The cake:
In a bowl mix the butter, sugar and the vanilla until you get a soft cream.
In another bowl mix the flour, the baking powder and the cocoa powder. Then add that mix bit by bit, alternating with milk, to the other mix (the one with the butter) and make sure that all ingredients are well mixed.
Beat the egg whites (adding a pinch of salt) until they form soft peaks and very slowly incorporate them to the other mixture.
Grease the mold and put it in the oven at 180º C during more or less 1 hour and 10 minutes. Take it out of the oven let it cool down.
The ganache:
Melt the chocolate together with the cream until you have a smooth creamy mixture. Let it cool down for a while and then put it in the fridge until it´s completely cold. Then, with a mixer whisk the cream a little bit, the color of the chocolate will be clearer now.
* Tip: don´t whisk too much, otherwise it will get very hard and will be difficult to spread on the cake (yes, happened to me :))
Just cut the cake in layers and fill it with the chocolate cream. You can decorate as you like, use your imagination!. This time I used macarons, you can find the recipe here.
